As olive oil is at the heart of Mediterranean cuisine, Natalia inevitably took the path of cooking. In the early ‘90s she started her own classes, providing a truly authentic Sicilian home cooking experience, highlighting how olive oil is the essential ingredient bringing all flavours alive. The secret to delicious, healthy eating.

Using old family recipes and the flavours inherited from the Greeks, Arabs, Spaniards and French, with olive oil and seasonal ingredients at their core, classes span from the

   

famous palermitano street food to the more aristocratic French-style dishes of the 19th century.

Dishes change with the seasons: wild asparagus, courgettes and mint in Spring; sun drenched tomatoes, basil and capers in Summer while in Autumn cauliflower and pumpkin bring vibrant flavours to the cooking classes.

Natalia’s recipes were collected into a book Seasons of Sicily (New Holland, Australia) where, fresh seasonal ingredients reign alongside RAVIDA’s very own olive oil and sea salt.

Whether it’s a ‘Dining with RAVIDA’ event cooked at Enoteca Norio in Tokyo Japan,  a cooking demonstrations at Williams Sonoma in the United States or a conference at the Kendall Institute of Chicago, at RAVIDA we love to share our knowledge for quality olive oil production and simple vibrant ingredients, all over the world.

Natalia has been a guest on numerous television programmes including ABC and the Food Channel in the United States, TV5 in France and the BBC in the UK, cooking her Sicilian dishes alongside renowned chefs such Rick Stein in the UK and Josee di Stasio in Canada.

Take part in a farm tour and tasting session and discover the world of quality olive oils. Walking through hundred year old olive trees, discover the varying properties of olive oil. Learn how to taste and recognise a great extra virgin olive oil, how the climate and the land interact on local olive varieties, and how methods of production and storage affect the final quality of oil.

Contrary to common belief, you can indeed fry with extra virgin olive oil and we will show you just how. Learn how to use olive oil in all types of cooking, how to preserve it and how to love it for what it is; not a tasteless fat, but a rich juice rich in monounsaturated fatty  acids and antioxidants filled with aromas and flavours.

Finally, let the flavours of Sicily come alive with an authentic farmer’s lunch on the terrace of the olive press. Unwind in the fresh Mediterranean air, surrounded by beautiful countryside, after a day of learning and tasting.
