Preparation:<\/strong>
\nRinse the beans and soak overnight in a bowl of cold water (some varieties may not require soaking).
\nDrain and wash again before using.<\/p>\n

In a clay pot, sweat the onion in 3 tablespoons of extra virgin olive oil over low heat until translucent then add the beans, a bay leaf and cover with warm water.
\nBring to a boil and simmer for about 1 \u00bd – 2 hours or until beans are soft and creamy. Season with salt half way through cooking adding hot water if necessary.<\/p>\n

When the beans break into a cream, chop the greens and add to the soup. Cook until soft.<\/p>\n
